How to: Fuck up some pork rinds
pork rinds or chicharrónes are one of my favorite foods and for whatever reasoning, likely the potato chip lobby, they have an awful reputation. they are cheap, easy to eat on the go, and have great nutritional macros as well as no trans fat (usually). there is a wide spectrum of rinds out there from the deep cut Actual Latin rind you can only find at bodgas to Utz to small batch locally sourced whole foods products. They all have their talking point but luckily Utz does it best, producing an affordable and widely available, consistent rind that is rich yet balanced, not over-seasoned, and not dressed up in overcomplicated, generally overoptimistic flavor (jalapeno lime is really popular among all rind markets- if you like these you probably also like salt and vinegar potato chips you sick fuck). Try not to think about Utz' livestock sourcing or practices. We all wind up making compromises.

A rind is nice by itself as a snack but the chicarrón is also a wonderful ingredient. Smashed rinds are an easy way to introduce crunch to your savory dish or salad, like you might employ breadcrumbs. I like to make them the star and really fuck them up.

Crush it with cotija or queso fresco or sour cream or... pretty much any mild white cheese product you can find in your grocery store's latin section.

Go in with your tomatillo salsa verde. Now is actually a really great time to buy tomatillos if they grow near you. Salsa verde takes like 15 minutes to make, smells really good, and involves virtually 0 cleanup/prep/mess. It keeps well too. Your rinds might start cracklin' when you do this. They snap and pop to greet you with eager anticipation.

Crush it with green shit. I used serrano pepper, watercress and sunflower shoots here but any fibrous green or veg works. Maybe a julienne of scallions. Any kind of pickled pepper. Fresh tomatillo, cherry tomatoes, radish rounds ... just put it on top.

Eat them with chopsticks before they get soggy in your allroom in front of a screen.

Pair with any kind of cerveza preparada, tepache, horchata, champagne, or some shitty adjunct style like highlife.

Is lean chicken was first cooked under boiling water. Then separed into sherded pieces to mix it with a fresh tomato so it can catch some flavor. White steam rice with a side of vegetables. No oil was added in this dish and just a bit of salt. Just trying to eat a little healthy is my second day #^.^# it’s my first time ever to have a diet which I am looking forward to my new type of life. Can’t wait for soccer season!!! :3

Homemade Chicken Tendies

2x Chicken breasts=7 strips
1/4 flour
1/4 panko crispy crumbs
1 egg
1/4 cup of vegetable oil

Heat the oil in the pan on medium high.
Cut your breasts into strips. 2 makes about 6-7 strips
get 3 bowls
Flour, Panko crumbs, and beaten egg
drench each strip in the beaten egg and cover each strip with flour and the panko crumbs
place the chicken strips in the oil and cook each side for 5 minutes.

PB and apple vs PB and banan.

how can you possibly pick? they are both flawless pairings. the way PB n banan creamy textures dovetail to form a lush, doughy mouthful with a slight yeasty tang. but also the way the sharp crunch and bright acid of an apple cut through the richness of PB, inviting u for another bite.

I'll never know.
Don't wanna make it mainstream but peanut butter with orange slices is actually really good

I LOVE fried rice with chicken and egg, but i never tried cooking it myself untill recently.
i have been perfecting the recipe since then. (The pic is one of my early attempts,
since then i added peas, cut the chicken in very thin slices and use marinade, use oyster sauce and
set aside the chicken and egg so it doesent get dry while cooking the rice.)

* 1 handfull of sliced spring onions
* 1 handfull of chopped onions
* 1-2 cloves of chopped garlic
* 1 handfull of grated carrots
* 1 handfull of peas
* 2 eggs
* 300g thin sliced chicken breast
* 2 cups of precooked basmati rice
* 2 table spoons of soy sauce
* 1 table spoon of oyster sauce
* sesame oil

Chicken marinade:

* 2 table spoons of sesame oil
* 1 table spoon of soy sauce
* 1 table spoon of rice wine
* 1 tablespoon of cornstarch
* salt/pepper/sugar
marinate for at least 30 mins

Heat up sesame oil in a wok as hot as you can, and cook the eggs like scrambled eggs. Set the eggs aside
in a bowl once they are barely cooked enough (still moist). you might have to chop the scrambled eggs into small pieces.
Add more oil if necessary, and add the marinated chicken. Keep the chicken moving, you don't want
any browning of the meat. Set the chicken aside in a bowl once it's barely cooked enough.
Add more oil if necessary, add the regular onions and garlic and let it cook untill it gety glassy,
now add the precooked rice. from now on you have to flip the rice constantly to avoid burning.
Add a good tablespoon of sesame oil, add a mix of soy and oyster sauce and let the rice fry for a few minutes, while flipping constantly.
Add all remaining vegetebles and finally add the eggs and chicken. Add a little salt, if needed.
