ive basically been doing One Person quests on normal for the last few days, and just recently all the quests that ive completed have gone back to being uncompleted, and if i complete any new quests, it doesn't recognize that ive completed it and wont unlock the next quest

Did you finish all the quests without knowing about it? The quests will all lit up for you to repeat them if you've done all of them.
If you're sure new quests are popping up while old ones just reset for some reason then I guess it's odd.
