Keep 5 Def on Mostly Mind Mag?

New to server, not so much to PSO but MAG feeding is something I don't remember a lot of.

I'm trying to do the "general use" MAG (5/36/62/97) through the FOnewearl guide on here but can't see how I'm gonna be able to make a Tapas from levels 10-35 without raising some def along the way or another stat getting above Mind which would ruin being able to get that evolution.

Maybe it's something simple. I can't seem to make enough sense of the feeding charts to figure this out. I appreciate anyone that can make sense of this for me.
 
It's easiest to raise DEX primarily for the first 35 levels because most 1-3rd evolution mags have either no pure MIND/POW feeds or terribly slow ones (like 33 monomates per level bad). Since the FOney min-max mag has 62 DEX, you're fine to raise it first. Additionally, if you want Mylla and Youlla, you'd want to raise DEX/POW first, as it's much easier to obtain at level 50 compared to a DEX/MIND mag.

You can follow the first 4 steps of the wiki simple POW Mag, but change the plan around level 50. Your mag at this point should be ~5/11/34/0, at which point I'd feed Moon Atomizers to raise MIND/DEX at the same time and end up at 5/11/44/39 at level 99.
From there you can swap to another character and feed from level 99->100 for the rare mag of your choice, with the formula being
DEF + DEX = POW + MIND.
You can determine what class/ID combo you need for a particular rare mag with this table from the wiki. For example, if you wanted Nidra you would need to do the last level of DEX as a
Viridia
Bluefull
Redria
Whitill
male force.
After you have your rare mag, you don't have to worry about evolution anymore and can just feed to finish the min-max stats, so dimates until 36 POW, antidotes to 62 DEX, and difluids to 97 MIND. If you want the exact feeding plan for this mag I can DM it to you or link it.

If this is your first character on the server, I'd actually advise against making a min-max FOnewearl mag first, since it only fully benefits her at level 200, which takes a long time to reach. A pure/mostly MIND mag is much more useful, the steps of which you can find on the wiki here.
